Bacon-Wrapped Pineapple Skewers

I’ve always found that these bacon-wrapped pineapple skewers are a delightful appetizer or a perfect snack for gatherings. So, let’s explore the steps you’ll take to create this mouthwatering dish!

Before we get started, I like to gather all my ingredients and tools. For this recipe, you’ll need the following:

  • Pineapple – One medium-sized pineapple works perfectly.
  • Bacon – About 12 to 16 slices.
  • Skewers – Wooden or metal, depending on your preference.
  • Brown sugar (optional) – For extra sweetness.
  • Black pepper (optional) – For a hint of spice.

Start by preheating your oven to 400°F (200°C). I’ve found that this temperature is perfect for achieving crispy bacon while keeping the pineapple juicy.

Next, I will prep the pineapple. I take my time to peel the pineapple, cut off the top and bottom, and slice it into bite-sized chunks. It’s necessary to make sure the pieces are equal in size to ensure even cooking. Once done, I set them aside for a moment.

Now, onto the bacon! I take each slice and cut it in half. Wrapping each piece of pineapple with half a slice of bacon is where the magic begins. I find that starting from one end of the pineapple, I spiral the bacon down until the entire piece is covered. It’s not only delicious but looks fantastic too!

After wrapping the pineapple chunks, I thread them onto the skewers. I usually aim for about three pieces of bacon-wrapped pineapple per skewer. This way, they cook evenly and are easy to serve. If you want an extra layer of flavor, I recommend sprinkling a little brown sugar and black pepper on top before placing them in the oven.

Now, all that’s left to do is bake them! I place the skewers on a baking sheet lined with parchment paper, ensuring there’s space between them for air circulation. I let them bake in the oven for about 15 to 20 minutes, turning the skewers halfway through. I’ve found that this method ensures the bacon crisps up nicely on all sides and the pineapple caramelizes beautifully.

Once they are golden and delicious, I remove the skewers from the oven and let them cool for a few minutes. You might want to serve them with a dipping sauce like sweet and sour or teriyaki for an added flavor punch.
