Stuffed Bell Pepper Cups

Peppers have always held a special place in my kitchen, not only for their vibrant colors but also for their versatility. Today, I want to share a delightful recipe that transforms simple bell peppers into mouthwatering Stuffed Bell Pepper Cups. This dish is not only visually appealing but also packed with flavor and nutrition. Before we begin, let me gather my ingredients. You will need:

  • 4 large bell peppers (any color you prefer)
  • 1 pound ground meat (beef, turkey, or chicken)
  • 1 cup cooked rice (white or brown)
  • 1 can diced tomatoes (14.5 oz, drained)
  • 1 cup shredded cheese (cheddar works great)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Now that I have everything ready, I start with preheating my oven to 375°F (190°C). This step ensures that the peppers will end up perfectly roasted and tender by the time we’re done.

Next, I wash the bell peppers thoroughly and slice the tops off, removing the seeds and membranes to create perfect little cups. The vibrant colors are not only pleasing to the eye but also provide a mix of flavors. I place these peppers upright in a baking dish, which I lightly coat with olive oil to prevent sticking.

With my filling ready, I begin stuffing each bell pepper cup, packing the mixture in generously. I then sprinkle the remaining cheese on top of each filled pepper for that golden, cheesy finish. Now, it’s time for the oven. I cover the dish with foil and place it in the preheated oven for about 30 minutes.

After 30 minutes, I remove the foil and let the stuffed peppers bake for an additional 10-15 minutes, allowing the cheese to melt and bubble. The final result is a beautiful, colorful dish that not only looks impressive but also pleases the palate. Once they’re out of the oven, I allow them to cool slightly before serving.
