Perfectly Soft-Boiled Eggs with Soldiers

Just the thought of soft-boiled eggs with crispy soldiers makes my mouth water. This simple yet delicious dish is perfect for breakfast or brunch and often brings a sense of nostalgia. To start, gather your ingredients and tools. You’ll need:

  • Fresh eggs (as many as desired)
  • Bread (I prefer sourdough or whole grain)
  • Butter (optional, but it adds a delicious richness)
  • Salt and pepper to taste

Now, let’s move on to the cooking process. The first step is to set water to boil. I fill a small saucepan with enough water to cover the eggs by about an inch. As I bring it to a vigorous boil, I carefully pop the eggs into the water using a spoon. I find that adding the eggs slowly helps to avoid cracking.

For the timing of the boil, I recommend:

  • For runny yolks: Boil for about 6 minutes.
  • For slightly firmer yolks: Boil for around 7 minutes.

While the eggs are boiling, I like to prepare the bread. Toast your slices until they’re golden brown and crispy. After toasting, I spread a thin layer of butter on each slice for added flavor. Then, I slice the toast into soldiers, which are finger-length strips perfect for dipping.

Once the timer goes off, I swiftly remove the eggs from the boiling water and transfer them into an ice-water bath to stop the cooking process. I let them sit in the ice bath for a couple of minutes until they are cool enough to handle. When ready to serve, I gently tap the top of the egg with a spoon to break the shell, then peel the top off. If you prefer, you can also serve them in egg cups.

At this point, I sprinkle some salt and pepper on the yolk to enhance the flavor. The combination of the warm, gooey yolk with the crunchy toast soldiers is delightful. I love to dip the soldiers straight into the egg and savor every bite!
