Ingredients:

  • 2 large eggplants
  • 1 lb of ground beef or lamb
  • 1 onion, chopped

  • 1 tsp dried oregano
  • 1 tsp cinnamon
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 1 cup milk
  • 3 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1 egg, beaten
  • 1 cup grated Parmesan or Kefalotyri cheese

Instructions:

1. Prepare the eggplants: Start by slicing the eggplants into about ½ inch thick rounds. Sprinkle generously with salt and let them sit in a colander for about 30 minutes. This helps draw out bitterness and excess moisture. After 30 minutes, rinse the eggplant slices and pat them dry with a paper towel.

2. Cook the meat filling: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, cooking until they’re soft and translucent.
