Mini Meatball Subs with Marinara Sauce

Let’s create some delicious mini meatball subs that are perfect for a quick meal or a fun gathering! These tasty bites are great for satisfying your cravings and are easy to make. Today, I’m excited to share my recipe for mini meatball subs with marinara sauce, which combines tender meatballs with a rich marinara sauce and the perfect bread for a delightful experience.

To start, you’ll need a few key ingredients. For the meatballs, gather the following:

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 clove garlic, minced
  • 1 egg
  • Salt and pepper to taste

Next, for the marinara sauce, you’ll need:

  • 2 cups marinara sauce (store-bought or homemade)

Lastly, for the subs, have:

  • Mini sub rolls or small hoagie bread
  • Shredded mozzarella cheese

Step 1: Make the Meatballs

To begin, preheat your oven to 400°F (200°C). In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, and egg. Season with salt and pepper to taste. With clean hands, mix everything together until well combined.

Now, form small meatballs about 1 inch in diameter and place them on a baking sheet lined with parchment paper. Bake the meatballs for approximately 15-20 minutes or until they are cooked through and slightly browned.

Step 2: Heat the Marinara Sauce

While the meatballs are baking, pour your marinara sauce into a saucepan and heat over medium heat until bubbling. Once the meatballs are ready, I like to add them directly into the sauce, letting them simmer for a few minutes to absorb all those delightful flavors.

Step 3: Assemble the Mini Meatball Subs

Now it’s time to put everything together! Take your mini sub rolls and gently open them up. Spoon a few meatballs and a generous amount of the marinara sauce into each roll. Finally, sprinkle some shredded mozzarella cheese on top. If you want a melty finish, you can place them under the broiler for a minute.

Step 4: Serve and Enjoy!

    I used short Italian sub rolls, cut the meats balls in half, toasted the rolls with fresh mozzarella cut into strips over the meatballs. It was awesome!
