Ginger Scallion Sauce

Your Go-To Condiment for Adding Umami to Everything

If you’ve ever tasted that addictive, fragrant green sauce at an Asian restaurant and thought, “How do I make this at home?”—this is it. This Ginger Scallion Sauce is bold, aromatic, and packed with flavor that enhances everything from rice and noodles to chicken, fish, and vegetables.

It’s quick to whip up, requires zero special tools, and keeps in the fridge for easy flavor boosts throughout the week.

Why I Love This Sauce

What’s not to love? You pour sizzling hot oil over scallions and ginger, watch it crackle like a tiny fireworks show, and out comes pure umami gold. This sauce is savory, slightly spicy, and just a bit tangy from rice vinegar. I love it drizzled over roasted veggies or spooned onto rice bowls alongside these easy turkey wings or sheet pan quesadillas.

Ingredients

📌 Makes about 1 cup

  • 1 cup scallions (green onions), finely chopped
  • ¼ cup fresh ginger, finely minced
  • 3 cloves garlic, finely minced
  • ½ cup neutral oil (canola or grapeseed)
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • ½ teaspoon white pepper
  • ¼ teaspoon salt (or to taste)

Instructions

Step 1: Prep the Aromatics

In a heatproof bowl, combine finely chopped scallions and minced ginger.

Step 2: Heat the Oil

In a small saucepan, heat ½ cup neutral oil until it’s shimmering and just starting to smoke—about 350°F (175°C).

Step 3: Pour & Sizzle

Carefully pour the hot oil over the scallion-ginger mix. It will sizzle instantly, lightly cooking the aromatics and releasing that irresistible aroma.

Step 4: Add Garlic

Immediately stir in the minced garlic so it cooks in the residual heat without burning.

Step 5: Season It

Add the sesame oil, soy sauce, rice vinegar, sugar, white pepper, and salt. Mix well to combine.

Step 6: Let It Rest

Let the sauce sit for at least 15 minutes before using—this helps the flavors meld beautifully.

Storage

  • Store in an airtight jar in the fridge for up to 5 days.
  • Flavor deepens over time—give it a stir before using.

How to Use Ginger Scallion Sauce

This condiment is endlessly versatile. Here are just a few ways to use it:

  • Spoon over steamed white rice or Dorito casserole leftovers.
  • Drizzle over grilled or poached chicken.
  • Use as a topping for roasted vegetables.
  • Add to noodle bowls, stir-fries, or rice paper rolls.
  • Serve with steamed or grilled fish for a restaurant-level upgrade.
