  • 1/2 cup marinara sauce
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons olive oil or butter
  • 1/2 teaspoon dried basil (optional)
  • 1/2 teaspoon garlic powder (optional)
  • Salt and pepper to taste

How I Make It

Step 1: Prep the Chicken
If I’m starting with leftover chicken, I shred it and warm it up slightly. If I’m cooking it fresh, I season it with salt and pepper, grill or sauté until cooked through, then slice it thin.

Step 2: Assemble the Sandwich
I spread a thin layer of marinara on one side of each bread slice. Then I layer the chicken on one slice, followed by Parmesan and mozzarella. If I’m feeling extra, I sprinkle a little dried basil and garlic powder over the cheese. I top it with the second slice of bread, marinara side down.

Step 3: Toast It
I heat a skillet over medium heat and add a tablespoon of olive oil or butter. Once hot, I place the sandwich in the pan and cook for about 3 to 4 minutes per side, pressing gently with a spatula to help the cheese melt evenly and the bread brown.

Step 4: Serve It Up
Once the bread is golden and the cheese is melted, I remove it from the pan and let it sit for a minute before slicing. This helps everything settle so the fillings don’t slide out with the first bite.
