Instructions

  1. Cook the Pasta:
    • Cook the jumbo pasta shells in salted boiling water according to the package instructions. Drain, rinse with cool water, and set aside.
  2. Prepare the Filling:
    • In a large bowl, mix the ricotta, Parmesan, mozzarella, chopped spinach, crumbled bacon, egg, garlic powder, onion powder, salt, and pepper. Stir until well combined.
  3. Stuff the Shells:
    • Carefully spoon the filling into each shell, filling them generously. Place the stuffed shells in a greased baking dish.
  4. Make the Sauce:
    • In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes. Gradually add the milk, whisking constantly to avoid lumps. Cook until the sauce thickens, then stir in the mozzarella, Parmesan, and nutmeg. Season with salt and pepper to taste.
  5. Assemble and Bake:
    • Pour the creamy cheese sauce over the stuffed shells in the baking dish, ensuring they’re well coated. Cover the dish with foil and bake at 375°F (190°C) for 20 minutes. Remove the foil and bake for an additional 10 minutes until bubbly and golden.
