Ingredients
- 1 tablespoon butter or oil
- 2 cups frozen diced potatoes or hash browns
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup cooked bacon, sausage, ham, or canned meat
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- Salt and black pepper, to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Green onions or parsley, optional
Instructions
- Heat butter or oil in a large skillet over medium heat.
- Add potatoes and cook for 8–10 minutes, stirring occasionally, until golden and crispy.
- Stir in onion, bell pepper, and cooked meat. Cook for another 4–5 minutes.
- Season with salt, pepper, garlic powder, and smoked paprika.
- Make four small wells in the potato mixture. Crack one egg into each well.
- Cover the skillet and cook until the eggs are set to your liking.
- Sprinkle cheese over the top and let it melt.
- Garnish with green onions or parsley if desired.
Easy Variations
Use canned potatoes if you want a shelf-stable version.
Swap cheddar for pepper jack for a spicy kick.
Add salsa, hot sauce, or sour cream before serving.
Use leftover taco meat or pulled pork for a bigger flavor.
Tips
Do not stir too much once the potatoes hit the skillet. Let them sit long enough to crisp.
If using canned potatoes, drain and pat them dry first.
For fully cooked eggs, cover the skillet longer.
For runny yolks, remove from heat as soon as the whites are set.
