This Cheesy Kielbasa Hashbrown Casserole Is the $12 Dump Dinner

If you’re looking for the ultimate easy dinner that’s hearty, budget-friendly, and practically cooks itself, let me introduce you to this Cheesy Kielbasa Hashbrown Casserole. It’s a dump-and-go slow cooker meal that comes together with pantry staples, minimal prep, and maximum comfort.

This one is pure weeknight gold: smoky sausage, cheesy hashbrowns, and a creamy sauce that brings everything together. It’s rich, filling, and makes enough to feed a hungry crowd. Best part? It costs around $12 total. If that’s not a win, I don’t know what is.

Why This Dump Meal Deserves a Spot in Your Weekly Lineup

This recipe checks every box: quick, affordable, satisfying, and ridiculously easy. Here’s why it works so well:

  • Dump-and-go simplicity: No pre-cooking, no fancy steps—just toss it in the crockpot and let it do its thing.
  • One-pot cleanup: I use slow cooker liners to make this even easier to clean up.
  • Feeds a crowd: Perfect for busy families, potlucks, or meal prepping for the week.
  • Ultra-versatile: You can tweak the seasonings or swap ingredients depending on what you have on hand.

This is the definition of no-fuss comfort food.

Ingredients You’ll Need

  • 1 package Kielbasa or smoked sausage (like Ekrich), cut into chunks
  • 1 (32 oz) bag frozen hashbrowns
  • 1 small onion, diced
  • 2 cups shredded cheddar cheese (divided)
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 (10 oz) can cream of mushroom or cream of chicken soup
  • Salt and black pepper, to taste
  • Garlic powder and onion powder, to taste
  • Optional: minced garlic or garlic powder for extra flavor

How I Make This Cheesy Slow Cooker Casserole (Step-by-Step)

1. Add Everything to the Crockpot

I start by spraying or lining my slow cooker with a crockpot liner for easy cleanup. Then I dump in the sliced kielbasa, frozen hashbrowns, diced onion, and 1 ½ cups of the shredded cheddar cheese.

2. Mix the Creamy Sauce

In a separate bowl, I mix the cream soup, milk, and sour cream until smooth. Then I season it with salt, pepper, garlic powder, and onion powder to taste. (Sometimes I throw in a pinch of paprika or cayenne for a little kick.)

3. Pour and Stir

I pour the creamy mixture over everything in the crockpot and give it a quick stir to combine. It doesn’t have to be perfect—the cheese will melt and blend while it cooks.

4. Top and Cook

I sprinkle the remaining ½ cup of cheddar cheese on top, then cover and set the slow cooker to low for 6 hours or high for 3 to 4 hours, depending on how soon I need it. When it’s done, the hashbrowns are tender, the cheese is bubbly, and the whole thing smells amazing.

How I Like to Serve It

This casserole is hearty on its own, but I love pairing it with:

  • A fresh green salad to lighten things up
  • Roasted broccoli or green beans for something green on the side
  • Texas garlic toast or buttery dinner rolls to round out the meal

It also makes great leftovers—just store it in an airtight container and reheat for an easy lunch the next day.

Tips for Success

  • No need to thaw the hashbrowns: They cook perfectly from frozen.
  • Want it crispier?: Pop a serving under the broiler for 2–3 minutes to get a little golden crust on top.
  • Add-ins welcome: Bell peppers, jalapeños, or even a handful of spinach can mix right in.
  • Make it spicier: Use spicy sausage or add hot sauce to the creamy mixture.

FAQs From My Kitchen

Q: Can I use shredded hashbrowns instead of cubed?
A: Yes! Either works fine. Shredded hashbrowns cook a bit faster and give it a softer texture.

Q: Can I bake this instead of using a slow cooker?
A: Definitely. Combine everything in a greased 9×13 baking dish, cover with foil, and bake at 375°F for about 40–45 minutes. Remove the foil and bake for another 10–15 minutes to brown the top.

Q: Can I make this ahead of time?
A: Yes! Assemble it in the crockpot insert, cover, and refrigerate overnight. In the morning, just pop it in the slow cooker and start cooking.

Q: What’s the best sausage to use?
A: Kielbasa, smoked sausage, or even turkey sausage all work great. Just make sure it’s fully cooked before adding.

Why This Casserole Belongs in Your Rotation

This Cheesy Kielbasa Hashbrown Casserole is proof that you don’t need to spend a ton of time—or money—to make something delicious. It’s creamy, cheesy, salty, smoky, and basically the coziest thing you can put in a bowl. And the best part? It’s effortless.

If you’re looking for a budget-friendly crowd-pleaser that’ll become a new family favorite, this is it. Just dump it, forget it, and dig in.

Recently, we made this recipe (Cheesy Kielbasa Hashbrown Casserole); we all enjoyed it tremendously! A question, if I may: when the casserole finished (crock pot), there was a fairly large amount of liquid in the bottom of the pot. Is this normal or should we THAW the potatoes before including them? Thank you.

COULD HAVE BEEN A lot of ice buildup. I cooked mine in oven and it came out just fine. Also the lid probably made some condensation from cooking.
