  • 1 teaspoon salt

Instructions:

  1. Blend the Base: Place half the chillies, garlic, and ginger in a food processor and blend until finely chopped.
  2. Cook the Mixture: Transfer the mixture to a large heavy-based saucepan and add the sugar, apple cider vinegar, and salt. Cook over low heat, stirring until the sugar has dissolved.
  3. Simmer and Thicken: Increase the heat to high and bring the mixture to a boil. Reduce the heat to a simmer and cook for 40-45 minutes, or until the jam has thickened and has a glossy appearance.
  4. Add Remaining Chillies: Meanwhile, finely chop the remaining chillies and add them to the saucepan in the last 10 minutes of cooking.
  5. Cool and Store: Once thickened, remove from heat and let cool slightly. Pour the hot jam into sterilized jars and seal. Allow to cool completely before storing.
