How to Make Classic Tomato Basil Soup from Scratch

Just imagine the comforting aroma of a warm bowl of homemade tomato basil soup wafting through your kitchen. This delicious soup is perfect for any season and can be made easily from scratch with fresh ingredients. I’ll walk you through the simple steps to create a rich, flavorful tomato basil soup that will impress your family and friends.

To begin, gather all your ingredients. For this recipe, you will need:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (14.5 ounces each) diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 2 cups fresh basil leaves
  • 1/2 cup heavy cream (optional)

Now that you have everything ready, let’s start cooking! First, heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until the onion becomes translucent. Stir occasionally to prevent it from browning.

Next, add the minced garlic to the pot and sauté for another minute, being careful not to let it burn. The combination of onion and garlic creates a fragrant base for your soup.

Once the vegetables are tender, it’s time to add the diced tomatoes, including their juice, as well as the vegetable broth to the pot. Stir in the sugar, which balances the acidity of the tomatoes, and season with salt and pepper to taste. Bring the mixture to a gentle simmer and let it cook for about 20 minutes, allowing the flavors to meld beautifully.

After the simmering time is up, I like to add the basil leaves to the pot. If you want a smoother soup, you can purée the mixture using an immersion blender or transfer the soup to a regular blender in batches. Be cautious with the hot liquid! Blend until you reach your desired consistency. If you prefer a chunkier texture, you can skip this step.

If you want to make your tomato basil soup creamier, return the soup to the heat, and stir in the heavy cream just before serving. Allow it to warm for a few more minutes, then adjust the seasoning as needed. This step is completely optional, but I find it adds a delightful richness to the soup.

When everything is combined and heated through, ladle the soup into bowls, garnish with a few fresh basil leaves or a drizzle of olive oil, and serve warm. Enjoy this classic comfort food with a side of crusty bread or a grilled cheese sandwich for a perfect meal.
