Steak with Creamy Mushroom Sauce – Elegant, Hearty & Totally Satisfying

There’s something timeless about a perfectly seared steak paired with a rich, savory mushroom cream sauce. This Steak with Creamy Mushroom Sauce brings restaurant elegance to your kitchen without complicated steps or hard-to-find ingredients.

Golden-crusted ribeye, filet mignon, or sirloin gets topped with a luscious sauce made from sautéed mushrooms, garlic, shallots, cream, and optional Parmesan — ideal for date nights, birthdays, holidays, or just because. It’s the kind of dish that turns an ordinary night into something worth celebrating.

Why I Love This Recipe

This steak recipe is the perfect balance of richness, texture, and bold flavor. The pan-seared steak is juicy and tender, while the mushroom sauce is silky, nutty, and loaded with umami. And because the sauce is made in the same pan you cooked the steak in, every bit of browned, buttery fond gets transformed into flavor gold.

Whether served with mashed potatoes, roasted veggies, or a crisp green salad, this dish feels indulgent but is surprisingly easy to pull off.

Ingredients

For the Steak:

  • 2–4 steaks (ribeye, filet mignon, sirloin, or NY strip, about 1 inch thick)
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 garlic cloves, smashed
  • 2 sprigs thyme or rosemary (optional)

For the Creamy Mushroom Sauce:

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 8 oz (225 g) mushrooms, sliced (cremini, baby bella, or mixed)
  • 2 garlic cloves, minced
  • ½ small onion or shallot, finely chopped
  • ½ cup dry white wine or beef broth
  • ¾ cup heavy cream
  • 1 tsp Dijon mustard (optional)
  • ¼ cup grated Parmesan cheese (optional)
  • Salt and pepper, to taste
  • Fresh parsley or chives, for garnish

Optional Add-Ons

  • Splash of brandy or cognac for a fancier flair
  • Add a tablespoon of cream cheese or crème fraîche for extra body
  • Use mixed mushrooms like shiitake, oyster, or chanterelle for deeper flavor
  • Substitute cream with half-and-half or coconut milk for dietary needs

Instructions

1. Prep the Steaks

  • Pat steaks dry with paper towels.
  • Season generously with salt and black pepper.
  • Let sit at room temperature for 20–30 minutes for even cooking.

2. Sear the Steaks

  • Heat olive oil in a large skillet over medium-high heat.
  • Add steaks and cook 3–5 minutes per side, depending on thickness and doneness preference.
  • Add butter, smashed garlic, and thyme or rosemary during the last minute.
  • Baste steaks with butter for extra flavor.
  • Remove steaks and tent loosely with foil to rest.

🔥 Chef’s Tip: Internal temps – 125°F (rare), 135°F (medium-rare), 145°F (medium), 150°F+ (well-done)

3. Make the Mushroom Sauce

  • In the same pan (don’t clean it!), reduce heat to medium.
  • Add butter and olive oil, then mushrooms. Sauté 6–8 minutes until golden and tender.
  • Add garlic and onion/shallot, cook another 2–3 minutes.
  • Pour in white wine or broth and deglaze, scraping up all the browned bits.
  • Simmer 2–3 minutes to reduce.
  • Stir in cream and Dijon, simmer 2–3 more minutes until slightly thickened.
  • Add Parmesan, season with salt and pepper.

4. Serve

  • Spoon the hot sauce over rested steaks.
  • Garnish with chopped parsley or chives.
  • Serve immediately with your favorite sides.

Tips for Success

  • Rest your steak after cooking to keep it juicy.
  • Use room-temperature steaks to get an even sear.
  • Don’t rush the mushrooms—caramelization = flavor.
  • Deglazing is key—all the flavor from searing the steak boosts your sauce.
