<li><strong>Fresh cilantro for garnish</strong></li>

<p>First, I <strong>cook the rice noodles</strong> according to the package instructions. Usually, they just need to be soaked in hot water for 10-15 minutes until they are tender. While the noodles are soaking, I prepare my vegetables.</p>



<p>In a large skillet or wok, I heat the <strong>vegetable oil</strong> over medium-high heat. Once it&#8217;s hot, I add the minced garlic and sauté it for about 30 seconds until fragrant. Next, I toss in the <strong>carrots</strong> and <strong>bell peppers</strong>, cooking for another 3-4 minutes until they start to soften.</p>



<p>If I decide to add an egg for extra protein, I push the vegetables to one side of the skillet, crack the egg into the pan, and scramble it. Once it&#8217;s cooked, I mix it back in with the vegetables.</p>



<p>Now, I drain the rice noodles and add them to the skillet. I then pour in the <strong>soy sauce</strong>, <strong>lime juice</strong>, and <strong>sugar</strong>. I gently toss everything together to ensure the noodles and vegetables are coated in the sauce. I also add the <strong>bean sprouts</strong> and <strong>green onions</strong> at this stage, mixing everything for another minute until the ingredients are heated through.</p>



<p>The dish is almost ready! I love to serve it hot, garnished with <strong>crushed peanuts</strong> and fresh <strong>cilantro</strong>. You can also squeeze some extra lime juice on top for an added zing. This homemade Vegetable Pad Thai is bright, fresh, and completely satisfying.</p>
