<p>Once you have everything ready, it&#8217;s time to start cooking. First, heat a large skillet or a traditional <strong>paellera</strong> over medium heat. <p>Allow the mixture to simmer on a low heat for about 10 minutes without stirring. This helps form a crust on the bottom, known as <strong>socarrat</strong>, which is a cherished part of paella. After 10 minutes, I add the <strong>shrimp</strong> and <strong>mussels</strong>, pressing them into the rice gently. Cover the skillet and cook for an additional 5-7 minutes until the seafood is cooked through and the mussels have opened.</p>



<p>When everything is ready, I take it off the heat and let it rest for about 5 minutes. I garnish with <strong>fresh parsley</strong> before serving.
